Sweet Potato Baba Ghanoush

Baba ghanoush (pronounced bah-bah, gah-new-shh) is a classic Mediterranean dish served with pita bread. It is typically made with smashed roasted eggplant mixed with onions, tomatoes, and olive oil. But here at Green Tidings we like to change things up a bit.


For our new menu item we decided to replace the eggplant with sweet potatoes. Sweet potatoes add a thicker consistency than the traditional baba ghanoush. By adding tahini to the mix, you get a nutty flavor and the fresh lemon juice creates a tart and acidic note. Our baba ghanoush, sprinkled with za’atar seasoning, is served on a freshly toasted baguette and topped with fresh mint and crunchy pistachios.
