We are excited to be bringing back our featured menu item of the week, and what better way to start off this semester than with our Red Curry Coconut Chicken! This classic Thai dish packs a flavor punch with every bite and is the perfect afternoon meal to keep you going throughout your day.
We simmer a generous amount of juicy, local chicken in a red curry coconut broth, giving this dish just the right amount of spice and sweetness to leave you craving more. Layering the meat over herbed basmati rice and mixing in some fresh Terp Farm squash completes this dynamic meal and is sure to have Green Tidings fans lining up at the truck! We recommend pairing this dish with our famous Half and Half, a delicious mix of lemonade and passion tea with orange, lemon or lime. We guarantee you’ll be satisfied with the results!
As always, all of our ingredients are supplied by local farms that put an emphasis on sustainability. We are especially proud to work with Terp Farm, located just 15 miles off campus, to supply our customers with fresh, local produce week in and week out. Terp Farm offers students at the University of Maryland the opportunity to learn sustainable farming practices while supplying the school and local food banks with nutritious food that benefits thousands of people. So yeah, you really ought to try the squash in this dish!
